I “discovered” this recipe when, as a young girl, I was my Mom’s assistant cook. I’m not sure where I found it, but these cookies are delightful! They can be made more “healthy” by using some multi-grain flour or by adding some wheat-germ, and they can be made crunchy by adding some slightly crushed cornflakes or “Honey Bunches of Oats” cereal (and cutting back a little on the coconut).
½ cup butter (room temp, real butter!)
1. Cream together butter and sugar. Then add the honey
2. Stir in flour.
3. Add baking soda, dissolved in the water.
4. Stir in the coconut and the oats
Form balls using about one tablespoon of dough, and flatten with a fork. Cookies do spread out, so leave ample room between cookies. Bake at 350ºF until lightly golden (10-15 minutes). Let cool about 5 minutes before removing from the cookie sheet.
