Artichoke Dip


One friend of mine always makes a point of having "adult food" as well as "children's food" at her children's birthday party, usually held at a park in the fall. I had never had artichokes before, and this was a delicious introduction experienced at one such birthday party.

2 - 14 oz. cans artichoke hearts, drained
cup mayonnaise
cup Parmesan cheese
dash of tarragon vinegar
salt and pepper



Place artichokes between paper towels and squeeze to remove excess moisture. Cut into quarters. Combine mayonnaise, cheese and vinegar in a mixing bowl. Add artichokes and stir gently to coat. Turn into a shallow baking dish or pie plate. Bake at 350F for hour OR turn into a glass or microwave-safe dish and microwave on high for 2 minutes, turning the dish if necessary to cook evenly. Serve hot with toothpicks, melba toast, crackers, or scoop-worthy tortilla or corn chips.
