Cranberry Squares


This is a great recipe from one of my Mom's old cookbooks. It is a wonderful way to use up leftover cranberry sauce!

1/2 cup soft butter
1 cup flour
2 tablespoons icing sugar

2 eggs
1 cup white sugar
1/3 cup flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon almond extract
1/3 cup currants
1/2 cup flaked coconut
1/2 cup slivered almonds
2/3 cup cranberry sauce

Lemon-Butter Frosting
1 tablespoons of soft butter
approx.1 cup of icing sugar
juice of half a lemon

Mix together the crust ingredients and spread in the bottom of a greased 8" or 9" square pan.

In a medium mixing bowl, beat eggs thoroughly. Add sugar, sifted dry ingredients, and flavouring. Stir in remaining stuff. Spread evenly over the crust and bake at 350F for 40 minutes. Cool and frost with lemon-butter icing.

For the frosting, in a small bowl mix butter and icing sugar. Add the lemon juice, a little at a time, until of spreading consistency.
