Wild Rice Soup

This is a great soup to warm you up in the winter, and it is a great use for that leftover turkey.

2 cups cooked wild rice ( cup raw)
1 large onion, diced
sweet green or red pepper, diced
1 ribs of celery, diced
1 can sliced mushrooms
cup butter (1 stick)
1 cup flour
8 cups chicken or turkey broth
salt & pepper to taste
1 cup light cream

Optional Extras:
1 small tin water chestnuts, slivered
cup sliced almonds
2 cups chopped chicken, turkey, or ham

Enjoy!

Prepare rice according to basic directions.

Sauté onion, green pepper, celery, and mushrooms in butter for about 3 minutes. Sprinkle in flour, and stir until mixed in, but do not let it brown. Slowly add the hot broth, stirring until flour-butter-vegetable mixture is well blended.

Add rice, seasonings, and optional extras. Heat thoroughly. Stir in cream. Heat gently - do not boil.
