Green Beans Parmesan

This is from Better Homes and Gardens All-Time Favourite Casserole Recipes, and this really qualifies! Perfect for any meal requiring something green, especially for those occasions when you have company, because you can make it ahead, and it is well received by all.

2 - 9 oz. packages of frozen French-style green beans

milk
cup chopped onion
2 tablespoons butter
2 tablespoons flour
teaspoon salt
cup grated Parmesan cheese
1 - 5 oz. can water chestnuts, drained and sliced

3/4 cup soft bread crumbs
2 tablespoons grated Parmesan cheese
2 tablespoons butter, melted

Cook beans according to package directions, drain, reserving liquid. Add milk to the reserved liquid to make 1 cup, and set aside.

In saucepan, cook onions in 2 tablespoons butter until tender. Blend in flour and salt. Stir in milk all at once, and cook and stir until thickened and bubbly. Stir in the Parmesan cheese, then add the beans and the water chestnuts. Turn into a buttered 1-quart casserole dish.

Toss bread crumbs and remaining Parmesan cheese in the melted butter, and sprinkle on top of the casserole. Bake, uncovered, at 350F, for about 30 minutes.
