Cranapple-Walnut Cake

This recipe I received from a friend, who got it from The Moosewood Cookbook, by Mollie Katzen. As usual, I have some alternative suggestions, but this is a nice, easy, moist, delicious cake.

1 3/4 cups brown sugar
2 tablespoons orange juice concentrate
1/2 cup of vegetable oil
2 eggs
1 teaspoon vanilla

2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg

2 cups peeled, chopped cooking apples
1/2 cup walnut pieces
1/2 lb. whole, fresh, raw, cranberries

Cream together oil and sugar with eggs, vanilla, and orange juice. Beat well. Sift together dry ingredients (make sure there are no lumps of soda), and add to first mixture. Stir in fruit and nuts.Bake in a greased 9x13" pan for 45-50 minutes at 350F.

Variations:
(1) use raspberries instead of cranberries, allow a few extra minutes if frozen. Instead of walnuts, sprinkle sliced almonds on top.

(2) instead of brown sugar, use 1 cup of creamed honey (if liquid honey, beat for 10 minutes first). Use half whole wheat flour and half all purpose flour, add 2 tablespoons wheat germ.
