This is a long-time favourite of mine. It has a wonderful lemon flavour, and makes a nice light dessert. I recently discovered a restaurant in Hanover, MA, that offers this as a regular item on their dessert menu. If you like lemon desserts, you've got to try this lemon stuff!!

3/4 cup white sugar
1/4 cup all purpose flour
3 tablespoons butter, melted
1 teaspoon grated lemon rind
1/4 cup lemon juice
1 1/2 cups milk
3 well beaten egg yolks
3 stiffly beaten egg whites

Enjoy!

Combine dry ingredients. Stir in melted butter, lemon rind, and juice. Combine milk and egg yolks, and add to lemon mixture. Fold in egg whites.

Pour into an 8"x8"x2" baking pan. Place that pan into a larger pan, and place in the oven. Pour hot water into the larger pan, 1" deep. Bake at 350F for 40 minutes (should be lightly golden on top). This is wonderful warm, or chilled, and looks really elegant when made into individual servings, inverted, and garnished with fresh berries.
