Apricot Dream Squares


I remember making these squares as a girl, which means they are easy to make, and taste good, too!

Crumb Crust:

1 cup graham cracker crumbs
1 cup a.p. flour
1 cup shredded coconut
1 cup brown sugar
teaspoon salt
cup melted butter


1 cup dried apricots
2 eggs
1 cup brown sugar
1 tablespoon lemon juice
1/3 cup flour
teaspoon baking powder
teaspoon salt

Preheat the oven to 350° F. Combine first five ingredients. Add melted butter and mix well. Set aside 1 cup of the topping, and pack the remainder into the bottom of a 9" square pan. Bake for 10 minutes.

Cover apricots with water. Simmer until tender, approximately 15 minutes. Drain. Chop. Beat eggs until light and add brown sugar and lemon juice. Stir in sifted dry ingredients and apricots. Spread over bottom layer. Sprinkle with the reserved topping. Bake 30-35 minutes. Cool. Cut in squares.
