LEMON BREAD PUDDING

This is one of my father's favourite desserts, and it is great warm or cold.

9 slices of bread, cubed
3 cups milk
3 eggs
3/4 cup white sugar
1/2 teaspoon salt
1 teaspoon vanilla
currants, slivered almonds, raisins, and/or Craisins (optional)

Lemon Sauce:

1 tablespoon cornstarch
1/3 - 1/2 cup white sugar
pinch of salt
1 cup water
grated rind and juice of 1 lemon
1 teaspoon of butter

Butter a 9"x13" pan, and put bread cubes into the pan. Beat eggs, add milk, sugar, salt, and vanilla. Pour over bread cubes. Sprinkle with raisins, etc., if desired. Bake at 400F, approx. 40 minutes (should be golden on top).

Combine sugar, cornstarch, and salt. Add water. Cook in saucepan or microwave, stirring frequently, until "clear". Add lemon juice, rind, and butter. Pour sauce over bread pudding. Sauce will be slightly runny initially, but will thicken when pudding is refrigerated.
