SPINACH RICE CASSEROLE

This is a recipe my Mom got from a neighbour when I was a child, and it was one of the ways I liked spinach. This makes a great light lunch by itself, or a side dish for dinner.

1 package of spinach, chopped
4 eggs
1 cup milk
1 tablespoon of dried onion flakes
1 tablespoon Worcestershire Sauce
1 to 1 teaspoons salt
3/4 lb. shredded cheddar cheese
3 cups cooked rice
1/4 cup butter

Beat eggs and stir in the milk, onions, Worcestershire, and salt. Add cheese and fold in the spinach and the cooked rice. Pour melted butter in a large casserole dish, or a 9x13" pan, to coat the pan, and then pour the butter into the spinach mixture, and stir. Bake at 350 F, for 45-60 minutes, or until it "tests done" near the center. (Depends on the depth of the casserole dish.)
