This is not just another "brownie" recipe. These squares are slightly gooey, with a shortbread base, and a creamy frosting.

Bottom Layer
cup brown sugar
cup butter
1 cup flour

"Fudge Brownie" Layer
2 tablespoons flour
teaspoon salt
3/4 cup brown sugar
3 tablespoons cocoa
1 teaspoon baking powder
2 beaten eggs
1 teaspoon vanilla
3/4 cup chopped nuts (optional)

3 tablespoons butter
2 tablespoons cream
1 egg yolk
1 teaspoon vanilla
3 tablespoons baking cocoa
2 cups icing sugar

  1. Combine ingredients for the bottom layer, and press into a 9" square pan.
  2. Sift together dry ingredients for the "Fudge Brownie Layer". Stir in vanilla, eggs, and nuts. Spread over the first layer.
  3. Bake at 325 F for 35-45 minutes. (It will NOT test done with a toothpick.) Frost when cool, and cut into squares when cold.
  4. For the frosting, combine ingredients, and beat until fluffy.




The above frosting recipe is perfect for a small batch of frosting for cupcakes, or a layer cake, or ordinary brownies.

A simple variation of this main concept is to use a "store bought" brownie mix on top of the bottom crust, and "ready to spread" chocolate fudge frosting.
