This easy "hot dish" was introduced to me in Minnesota. A super-nice neighbour brought this over when Trevor was born. This is the recipe as received from my friend. As you can see, it readily lends itself to a "double batch" one for your family, and one for the freezer, or to give to a friend.

8 oz. of spaghetti, cooked
2 eggs, beaten
cup grated Parmesan cheese

1 cup sour cream

1 small onion, chopped
some green or red pepper, chopped
1 tablespoon butter

lb. pork sausage, cooked and crumbled
jar of spaghetti sauce
mozzerella cheese

  1. Combine spaghetti, eggs and parmesan cheese. Put in the bottom of a greased 9x13" pan.
  2. Spread sour cream over the first layer.
  3. Sauté onion and pepper in butter, and spread over sour cream.
  4. Sprinkle cooked sausage over the previous layer.
  5. Pour sauce evenly over the sausage.
  6. Bake at 350 F, 25 minutes. Sprinkle mozzerella cheese on top, and return to oven for another 10 minutes or so, for cheese to get bubbly.
