More Recipes



This is a recipe I got from my Mom. Classified as an appetizer, these also work well as a light lunch, when served with salad. If made in advance, they can be cut, cooled, and frozen as separate rectangles, and then re-heated as needed.

3 cups shredded zucchini, peel on *
cup finely chopped onion
cup grated old cheddar cheese *
2 teaspoons parsley flakes
teaspoon salt
teaspoon seasoned salt
teaspoon oregano
dash pepper
dash garlic powder
pound of cooked, chopped bacon

4 eggs slightly beaten
cup vegetable oil
1 teaspoons Worcestershire Sauce
1 cup Bisquick (biscuit mix)

  1. 1.In a large bowl add the first ten ingredients, and stir well.
  2. In a small bowl, using a whisk, add the remaining ingredients in turn.
  3. Add small bowl to large bowl, and mix well. Pour into a well buttered 9x13" pan. Sprinkle with paprika. Bake at 350 F for 25-35 minutes. Serve hot as hors'doeurves.

The *'d ingredients may be added generously. The optional ingredients are my enhancement. For a little more zip, increase Worcestershire sauce to 2 teaspoons, and add a more healthy dose of white or freshly cracked black pepper.
