TURNIP
CASSEROLE

This "comfort food" brings back warm memories of Boxing Day family gatherings. The flavour is mild, and many who do not like turnip, will admit that they like this casserole.

2-3 turnips, peeled, cubed, cooked, and mashed

1 cup apple sauce
2 tablespoons butter
4 tablespoons brown sugar
3 teaspooons salt
2 beaten eggs
dash of cream
freshly ground pepper to taste

1 cup fresh bread crumbs, mixed with 2 tablespoons of melted butter

  1. Beat all ingredients together, except for the bread crumbs.
  2. Pour into a buttered casserole dish, and top with buttered bread crumbs.
  3. (May be frozen until ready to use.)
  4. Bake uncovered at 350F, for 30-45 minutes (should be golden on top).
